rich chocolate mousse

I remember big family parties with tables full of food back when I was a child. At dessert – if we were lucky – there might be a chocolate mousse. I always hoped for mousse; I’d dollop that soft, spongy ooze on to my plate and wolf it down. This wasn’t very often though as the popular pavlova was often the main star on these occasions and, if I’m honest, I don’t like it all that much.

I’ve heard it’s easy to make (luckily for me, that is true) but it was hard to find a recipe that didn’t also involve some sort of addition of alcohol. So this is the recipe I used.

Rich Chocolate Mousse

Ingredients

300g dark chocolate
6 egg yolks
1/2 cup caster sugar
500ml thickened cream

1) Break the chocolate into pieces and melt either over a double boiler or in the microwave (whatever you’re most comfortable doing). Once melted, set aside to cool slightly.
2) Whip the cream.
3) Separate the eggs and beat the yolks and sugar together until pale and creamy. Slowly add the chocolate mixture, combining well. Then fold in the whipped cream.
4) Spoon mixture into one large serving bowl or individual bowls (depending on the occasion). Cover and refrigerate until chilled.

Notes

1) I used Safeway brand chocolate, nothing fancy, and it was delicious.
2) As I said above, this is very rich!
3) I used the saved egg whites to make a disgustingly healthy egg white omelette.
